Big Sister Wendy Salmon Glaze

My friends, Matt and Wendy, have introduced me to many-a-30-minute delicacy. In fact, every time I hang out with Wendy she teaches me something new, earning her the name "Big Sister Wendy." This is her easy (yet delicious) glaze for salmon. I would bet most people already have the ingredients. Salmon Glaze Ingredients: Mustard (any kind: regular 'ole yellow, Dijon, Grey Poupon, doesn't matter) Honey Garlic Olive Oil Balsamic Vinegar Salt & Pepper Mix equal parts mustard and honey in a medium size bowl. Add a few cloves of chopped garlic. Add a few 'glugs' of olive oil. Add a tiny bit of balsamic vinegar (about 1/3 of the olive oil used) Season with salt and pepper, and whisk together. Place salmon (skin off if going to bread, skin on if going to bake) in the glaze and let sit for 30 minutes. Easy Baked Salmon: Line baking pan with foil and leave enough to wrap around fish. Lay salmon (skin side down) in the foil and pour glaze on top. Wrap salmon in foil. Slap that puppy in the oven at 350. You will have a delicious fish dish in 40 minutes. (Salmon should be pink, but flake easily with a fork.) Breaded Salmon: Dredge salmon in glaze and then coat with bread crumbs (or pistachio crumbs, if you're feeling fancy). Heat olive oil in saute pan. When pan/olive oil are very hot, add salmon and cook about 7 minutes on each side. This goes great with an arugula salad. Recipe coming soon!
